Decadent chocolate brownies!
Who doesn’t love brownies? These are sugar-and wheat-free (but are not for anyone with a nut allergy or for dogs, as xylitol can be dangerous for dogs)
- 2 eggs
- 1/2 cup cream
- 1/4 cup melted butter
- 1 cup almond flour
- 1/2 cup cocoa powder
- 1 tsp baking powder
- 1/2 tsp bicarbonate of soda
- 3 Tblsps xylitol
- 2 Tblsps desiccated coconut, plus extra for decorating
Line and grease a medium baking tray (20 x 30cm). In a small bowl, whisk together the eggs, cream and melted butter. In a medium bowl, combine the almond flour, cocoa powder, baking powder, bicarb, xylitol and desiccated coconut. Pour the egg mixture into the dry ingredients and stir to combine.
Spoon the mixture onto the prepared baking tray. Smooth the top with a spatula. Bake in a preheated oven at 180°C for 15-20 minutes or until cracks appear. Leave to cool in the tray before cutting into squares. Using a heart-shaped stencil, dust each square with the extra desiccated coconut. Store in an airtight container.
